Lady Danbury’s Champagne Sorbet
Trust Lady Danbury to serve something decadent yet chic at her party! A champagne sorbet is made with champagne, sugar, and corn syrup and usually has a zesty profile that exudes the familiar bubbly mouthfeel of champagne.
Ingredients:
- 1 cup water
- 1 cup sugar
- 1 bottle champagne
- 1/4 cup lemon juice
Instructions:
- In a saucepan, combine water and sugar. Bring to a boil, stirring until the sugar dissolves. Let it cool.
- Mix the sugar syrup with champagne and lemon juice.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
- Transfer the sorbet to a container and freeze until firm.
- Serve in chilled glasses for a refreshing and sophisticated treat.
Lady Violet's Lavender Shortbread Cookies
The Bridgerton household is known for some of the most decadent desserts and some of them are made by the matriarch Lady Violet herself. This sweet, crumbly shortbread cookie is made with culinary lavender and makes for the perfect breakfast side.
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1 tablespoon culinary lavender (finely chopped)
- 1/4 teaspoon salt
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the butter and powdered sugar until light and fluffy.
- Stir in the flour, culinary lavender, and salt until the dough comes together.
- Roll the dough into a log, wrap it in plastic wrap, and refrigerate for at least 1 hour.
- Slice the chilled dough into rounds and place them on the prepared baking sheet.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Let the cookies cool on a wire rack before serving.
Colin's Summer Berry Pavlova
The charming Bridgerton sibling is the focus of the show’s upcoming season and is known for his adventurous side. The well-traveled Colin is witty and has a zest for life. He could very well have been acquainted with a pavlova which originated outside Europe. Meringue-based desserts were a hit during the Regency-era so the pavlova would fit in nicely with the dessert culture at the ton.
Ingredients:
- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1 cup whipped cream
- Assorted summer berries (strawberries, blueberries, raspberries)
Method:
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a clean, dry bowl, beat the egg whites until soft peaks form. Gradually add the sugar, one tablespoon at a time, and continue beating until stiff peaks form.
- Gently fold in the vinegar, vanilla extract, and cornstarch.
- Spoon the meringue onto the prepared baking sheet, forming a circle.
- Bake for 1 hour or until the pavlova is crisp on the outside and soft on the inside.
- Let it cool completely before topping with whipped cream and fresh berries.
Queen Charlotte's Royal Raspberry Mousse
Queen Charlotte is known for her love of excess. She enjoys the finer things in life and she loves decadent desserts, especially at the soirees at her palace. If there was one dessert that would be a regular at the royal household, it would most likely be this version of royal raspberry mousse which is as delicious as it is lavish!
Ingredients:
- 2 cups fresh raspberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1 tablespoon gelatin
- 2 cups heavy cream
- 1/2 cup powdered sugar
- Fresh mint leaves for garnish
Method
- Mix raspberries, granulated sugar, lemon juice, and water. Simmer until the raspberries break down. Strain them to remove seeds, leaving a smooth puree.
- In a small bowl, sprinkle gelatin over a few tablespoons of cold water. Let it bloom.
- Heat the bloomed gelatin in the microwave for a few seconds until it becomes a liquid.
- Mix the gelatin into the raspberry puree.
- In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
- Gently fold the raspberry mixture into the whipped cream until well combined.
- Spoon the mousse into serving glasses and refrigerate for at least 2 hours.
- Garnish with fresh mint leaves before serving.
