Ingredients:
For the cake:
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder

- 1 cup coconut milk

Method:
Preheat the oven
Preheat oven to 180°C or 350°F. Grease and flour two 8-inch round cake pans. Line bottoms with parchment paper for easy removal.
Mix the cake batter
In a medium bowl, sift in all-purpose flour, baking powder, and salt. Set it aside. Now, in another big bowl, cream together soft butter and sugar until fluffy light. Add eggs, beating in well after each addition, add the vanilla extract.
Combine the wet ingredients and add the flour mixture and the coconut milk. Finish with flour mixture. Mix well to ensure it is smooth. Fold it into a texture by adding shredded coconut.
Bake the cake

In a large bowl, beat the softened butter until creamy. Add in the powdered sugar a little at a time until well incorporated. Then add coconut milk and vanilla extract. Beat until smooth and fluffy.
Assemble the cake
Once the cakes have cooled, spread a layer of frosting over the top of the first cake. Place the second cake over the top and frost the entire cake. Sprinkle shredded coconut around the sides and top. For toasting coconut, lightly toast in a pan until golden and then sprinkle over the cake.
