The classic Bengali Sandesh is the epitome of culinary finesse. Crushed pineapple gives a global spin to the authentic and indigenous dessert tradition of Eastern India.

  • 500 gm fresh paneer.
  • 200 gm crushed pineapple.
  • 100 gms powdered sugar
  • 1 tbsp vegetable oil
  • 1 teaspoon cardamom powder
  • Pineapple slices (for garnish)

Instructions:

  1. In a blender, puree the chopped pineapple until smooth. Set aside. You can use a sieve to make sure the puree is lump-free.
  2. In a large bowl, mash the fresh paneer until smooth and soft. Add powdered sugar and cardamom powder, and mix well until the sugar is fully incorporated.
  3. Heat 1 tablespoon of oil in a non-stick pan over low heat. Add the mashed paneer mixture and stir continuously for four to five minutes until it begins to thicken slightly. Avoid overcooking, as this will make the sandesh hard.
  4. Pour in the pineapple puree and cook for another couple of minutes, stirring gently. Once the mixture starts to leave the sides of the pan and thickens to a soft dough consistency, you'll know it's done. So turn the heat off.
  5. Allow the mixture to cool slightly. Apply oil on your palms. Shape the sandesh into small round discs or squares, depending on your preference. You can use a mold for fancy shapes if desired.
  6. Garnish each piece with a small slice of pineapple on top. Chill the pineapple sandesh in the refrigerator for a couple of hours before serving for the best taste.
