  • 100g sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour

Method:

Start by preparing the crust. Crush the digestive biscuits into fine crumbs. You can do this using a food processor or by placing the biscuits in a ziplock bag and gently crushing them with a rolling pin. Once the biscuits are finely crumbled, pour in the melted butter and mix until the crumbs are evenly coated. Press the crumb mixture into the base of a springform pan, ensuring it’s compact and level. Let the pan cool in the refrigerator as you make the mixture for the cheesecake filling.

Melt the dark and milk chocolate together. This can be gently done over a double boiler or with the microwave, stirring between in a series of short blasts until it's melted nicely. Allow it to cool a little before continuing with the cream cheese mixture below. You will be using a large mixing bowl to cream together the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Then stir in the vanilla extract and the flour until everything is well incorporated.

Finally, fold in the melted chocolate and heavy cream, combining all the ingredients thoroughly. Pour the cheesecake batter into the chilled biscuit crust and smooth out the top with a spatula. Tap the pan on the countertop a few times to remove any air bubbles. Bake for 50-55 minutes at 160°C or more until set and still a little wobbly at the center. Switch off the oven and let the cheesecake cool completely in the oven with the door left barely ajar.
