A mug brownie is a quick and easy treat that can be made in literally minutes. A variety of toppings can be added onto the mug brownie, from chopped nuts to fruit slices or decorations like balls and stars, chocolate or rainbow sprinkles or any other decoration you might have on hand. Since what you're making is essentially just a chocolate brownie, you can also top it with other flavours like a caramel sauce, a fruit jam or compote or even more chocolate sauce. You can sprinkle cookie crumble on top or brownie bits can be pushed into the batter for a fun surprise. Most of all, remember to have fun with it. Pull out your favourite microwave friendly mug, mix in all the ingredients, add toppings of your choice, microwave for a minute or so, and enjoy!

Ingredients:

  • 3 tablespoons unsweetened cocoa powder
  • 3 tablespoons all-purpose flour
  • 3 tablespoons granulated sugar
  • generous pinch of salt
  • 3 tablespoons milk
  • 2½ tablespoons vegetable oil
  • ¼ teaspoon vanilla extract
  • 2 tablespoons chocolate chips, plus more for sprinkling
  • ice cream to serve

  • Bring out a microwave safe mug. In it, add cocoa powder, flour, sugar and salt. Mix all these dry ingredients well. Use a fork to stir better, since a whisk probably won’t fit in. Tilt the mug slightly and then turn the whisk in small circles to mix in the whole thing.
  • Now add the milk, oil and vanilla. Add each ingredients a little bit at a time, thoroughly mix it in, and then add more. Mix it well, folding from the bottom, scraping from the sides, and ensuring all the ingredients are evenly mixed in.
  • Next, add the chocolate chips and fold those into the batter. Make sure you push them downward so they reach everywhere and are evenly distributed. You can also press in some chocolate chips on the top of the batter, if desired.
  • Place the mug in the microwave and heat on high power for 1 minute. The exact time depends on the microwave you're using. But the signs you should look for include seeing the brownie rise and cook. If it still appears moist in some spots, then continue cooking for 10 second intervals until fully cooked.
  • Once you’re sure it's cooked, bring it out and let it sit for 10 minutes.
  • Once cooled, serve with ice cream on top or on the side.

  • Make sure you’ve measured the flour correctly. If there’s too much flour, you will have a dense, fudge-like brownie. If you have a scale at home, use that to measure out the exact amount of each ingredient you need, especially the flour. And if you don't have a scale, make sure to fluff the flour with a spoon and then spoon it into the measuring cup, then level it with a knife. Then transfer it to the mug.
  • Do not overmix the batter or beat it too much or it will lead to a dense, tough brownie.
  • In terms of the mug, any microwave friendly mug is good. But if you have options, it's best to go with a wide, short mug since that will allow for more even cooking. You can use a thick, heavy ceramic mug for best results.
  • Keep a sharp eye on the brownie as it cooks. If you overcook it, it will become dry and coarse. If you notice the brownie is still soft and fudgy in places after it has had a chance to be in the microwave, don't cook it too much. Because the brownie will continue to cook and set even after you remove it from the microwave. As long as it's hot, it will continue cooking.
