Poached pears in red wine

Ingredients:
- 4 firm pears (about 600-700 gm)
- 750 ml red wine (a fruity variety works best)
- 150 gm sugar
- 1 cinnamon stick
- 2 star anise pods
- 1 vanilla bean, split lengthwise
- 1 orange, zest only
- 100 ml orange juice
Procedure:
- Peel the pears leaving the stems intact. Core them from the bottom to remove the seeds from the fruit.
- In a large saucepan, add red wine, cinnamon sticks, star anise, vanilla bean, orange juice, and orange zest. Over medium heat, bring them to a boil.
- Once it is boiling, gently lower the pears in the saucepan into the simmering wine mixture. Now reduce the heat low, keep the pear in the mixture for 25-30 minutes, and let the mixture soak into the fruits. You can occasionally turn the pears for the mixture to soak into the fruits.
- Once you notice the pears being tender, carefully remove them from the pan and set aside.
- Increase the heat and boil the rest of the wine mixture once again until it reduces to half of its previous quantity. This will create your red wine syrup.
- Place the pears on serving plates and drizzle the red wine syrup from the top. Serve with a dollop of mascarpone or vanilla ice cream.
Mango mousse shots
This party recipe is refined, delicious and easy to make. Because they will be served in shot glasses, the mess and hassle of serving them can be easily avoided.
Ingredients:
- 300 gm mango puree
- 200 ml heavy cream
- 50 gm powdered sugar
- 50 ml fresh lime juice
- Mint leaves (for garnish)
Procedure:
- First, take the mangoes, cut them, and make a puree with the help of a blender.
- Add some lime juice to the puree and blend them more.
- In a separate bowl, whip the heavy cream with sugar until it becomes fluffy and airy.
- Mix the mango puree with the heavy cream mixture and fold them well.
- Take some shot glasses and spoon the mousse in them. Keep them in the refrigerator for at least one hour.
- Take the shot glasses out of the fridge before serving. Top it with some small mango cubes and fresh mint leaves.
- For a variation, try different tropical fruits like dragon fruit, litchi, or cubed pineapples to garnish.
Lemon Cake Recipe

Ingredients:
- 125 gm unsalted butter, softened
- 125 gm caster sugar
- 2 eggs
- 125 gm self-raising flour
- Zest of half a lemon (about 1 tsp zest)
For the drizzle topping:
- 3/4 lemon, juiced
- 50 gm caster sugar
Method:
- Heat oven to 180°C. Line a 20 cm loaf tin with baking paper.
- Beat butter and sugar until light and fluffy. Beat in eggs one at a time.
- Fold in the flour and lemon zest until just combined.
- Pour batter into the prepared tin. Bake at 180°C for 40-45 minutes or until a skewer inserted comes out clean.
- While the cake cools, make the drizzle by mixing lemon juice and sugar until the sugar dissolves.
- Poke warm cake all over with a skewer to perforate it then slowly pour over freshly-made drizzle. This ensures the flavors reach the core of the cake.
- Allow to cool completely before removing from the tin. The cake stays good when kept covered at room temperature for almost a week.
