Summer is upon all of us and we’re all finding quick and refreshing ways to beat the heat and cool down. After a long day in school, you want to treat your children with something fresh, light, and packed with some nutrition. Find vegetarian recipes here that are cool, light, and tasty summer snacks which will replenish their electrolytes so they have the energy to power through homework time, and avoid feeling hangry before dinner.

Seasonal Fruit Salad

Ingredients:

  • 2 cups watermelon, cubed
  • 1 cup strawberries, hulled and halved
  • 1 cup blueberries
  • 1 cup pineapple, cubed
  • 1 mango, peeled and cubed
  • 2 kiwis, peeled and sliced
  • 1 cup grapes, halved
  • 2 oranges, peeled and segmented
  • 2 peaches, pitted and sliced
  • ¼ cup fresh mint leaves, chopped (optional)
  • 1-2 tbsp honey or maple syrup (optional)
  • 1-2 tbsp fresh lemon juice (optional)

Instructions:

  1. Combine all the fruits - watermelon, strawberries, blueberries, pineapple, mango, kiwi, grapes, oranges, and peaches - in a large mixing bowl.
  2. Add the lemon juice, maple syrup, and the chopped mint leaves, then give everything a good toss until well-mixed. The lemon juice will give the salad a slight tangy taste and also prevent the fruits from browning as they chill in the fridge.
  3. Let the fruit salad chill for about half an hour. You can prepare this in advance so it's ready right before your kids arrive home from school.

Frozen Grapes

Ingredients:

  • 500 gm grapes (any variety that’s available)

Instructions:

  1. Remove the grapes from their stems, wash them thoroughly and let them dry completely.
  2. Line a baking paper with some parchment paper and place all the grapes on it.
  3. Place the baking tray in the freezer for about 2 to 4 hours.
  4. Enjoy these frozen grapes, which are a great alternative to popsicles. You can store the extra ones in the freezer in a ziploc bag.

Mango Coconut Popsicles

Ingredients:

  • 1 can coconut milk
  • 450 gm chopped mangoes
  • 1 tbsp maple syrup (optional if the mangoes aren’t very sweet)

Instructions:

  1. Blend all the ingredients and add the sweetener if required.
  2. Ensure that you get a thick smoothie-like consistency.
  3. Pour this mixture into popsicle moulds and freeze for about 6 to 8 hours.
  4. Before serving, let the popsicles thaw so you can easily de-mould them. You can also run the molds under lukewarm water. Enjoy these icy treats with your kids.

Berry and Yoghurt Trifle

Ingredients:

  • 500 gm mixed berries (preferably fresh)
  • 1 tsp fresh lemon juice
  • 500 gm Greek yoghurt
  • 200 gm granola
  • 1 tsp vanilla extract
  • Fresh mint leaves for garnish

Instructions:

  1. Chop all the berries, you can use strawberries, raspberries, and blueberries. Then add about a tablespoon of lemon juice and mix well.
  2. Mix the Greek yoghurt and vanilla extract together. You can also add a sweetener like agave nectar or maple syrup if required.
  3. Then ladle half of this mixture to the bottom of a serving dish, add about 100 g of granola, followed by 250 g of vanilla Greek yoghurt.
  4. Repeat this process till you create multiple layers of fruit, granola, and yoghurt. Garnish with chopped mint leaves.
