Homemade Cinnamon Apple Cake
Ingredients:
For the cake:
- 251 gm flour
- 202 gm sugar
- 3 tsp baking powder
- A pinch of salt
- 251 ml milk
- 122 ml vegetable oil
- 3 eggs
- 2 tsp vanilla extract
For the apple filling:
- 253 gm apples
- 54 gm sugar
- 2 tsp cinnamon
- Sugar
- Whipped cream or vanilla ice cream
- Flowers for decoration
Method:
- You have to preheat the oven to 180°C, grease two round cake pans and line their bottoms with parchment paper.
- In a medium-sized bowl, you are going to sift together all-purpose flour, granulated sugar, baking powder, and salt.
- You have to take a large mixing bowl, and in it, whisk together milk, vegetable oil, eggs, and pure vanilla extract. Whisk the wet ingredients until they are quite smooth and thoroughly combined.
- You can then add the dry ingredients to the wet ingredients gradually while whisking them just together. You have to take care to not overmix the batter, as that will make the cake rather dense.
- You can peel, core and chop 2 to 3 apples, and add the chopped apples to the batter, folding them gently into the mixture.
- After that, you need to divide the batter between your prepared pans, smoothing tops with a spatula.
- You can bake the cakes for 25 to 30 minutes while making sure to rotate your pans halfway through baking.
- You are going to remove the cakes from the oven, let them cool in the pans for 5 minutes and then transfer them to a wire rack to completely cool.
- You have to mix together granulated sugar and ground cinnamon in a small bowl to prepare the cinnamon sugar topping.
- Once the cakes are cool, you are going to place one of the cakes on a cake stand and sprinkle the cinnamon sugar topping evenly over the top of the cake.
- Then, you can set the second cake on top of the first, and dust powdered sugar over the top of the cake.
- While serving, you need to cut the cake into slices that are each at least an inch in thickness, and serve with a dollop of whipped cream or a scoop of vanilla ice cream.
