Banana fritters have been a part of Chapchar Kut feasts for generations. Given Mizo’s love for naturally sweet, locally grown bananas, these fritters became a dessert staple, crispy golden outside and soft caramelised inside. The simplicity of deep-fried bananas coated in a light batter makes it a quick and special treat for the occasion. Ingredients (4 servings)

  • 4 bananas (small Indian varieties like Elaichi or Yelakki)
  • 1/2 cup maida (all-purpose flour)
  • 1/4 cup rice flour (for extra crispiness)
  • 2 tbsp cornflour
  • 2 tbsp powdered sugar
  • 1/2 tsp baking powder
  • A pinch of salt
  • 1/2 cup water or as needed
  • Oil for deep frying

For the chocolate drizzle:

  • 50g dark chocolate (chopped)
  • 2 tbsp milk
  • 1 tsp butter

Method:

  1. In a bowl, combine maida, rice flour, cornflour, powdered sugar, baking powder and a pinch of salt.
  2. Add water gradually and whisk to a smooth thick batter. It should coat the back of a spoon but still be pourable.
  3. Peel the bananas and slice them into thick rounds or lengthwise into halves, as per preference.
  4. Heat oil in a deep pan over medium flame. Test by dropping a little batter—if it sizzles and rises, the oil is ready.
  5. Dip each banana slice into the batter and coat well. Fry in batches till golden brown and crispy, flipping occasionally for even cooking.
  6. Remove and drain excess oil on a paper towel.
  7. Melt the dark chocolate with milk and butter in a double boiler or microwave in 20-second intervals, stirring till smooth.
  8. Arrange the hot banana fritters on a plate and drizzle the melted chocolate over them.
  9. Serve immediately while crispy, enjoy with extra chocolate on the side!
