  • 1 ¼ cups all-purpose flour

  • 2-3 tbsp cold water

  • 1 tsp lemon juice

  • 100g cream cheese, softened

Method:

  • To prepare the tart shell, place flour and sugar in a bowl. Rub chilled butter into the mixture with your fingers until it becomes coarse crumbs. Gradually add the egg yolk and cold water to it and then mix it all together until the dough is formed. Then cover the dough in cling film and refrigerate it for 30 minutes.
  • On a floured surface, roll out the cold dough to fit in the tart tin, gently press into it. Cut off any excess dough. With a fork, prick holes on the base of the shell. Chill this shell again. Fill the shell with parchment paper and baking beans to bake the blind. After browning the crust, take out of oven, and allow cooling completely.
  • For the filling, cook strawberries, sugar, and lemon juice in a saucepan until soft and syrupy. Puree the mixture and strain to remove the seeds. Whip cream and cream cheese until smooth, then fold in the cooled strawberry puree. Fill the tart shell with the strawberry cream mixture and chill for at least an hour before serving.
