- 1 ½ cups flour
- 1 tsp baking soda
- ½ tsp cinnamon

- ½ cup brown sugar, packed
- ¼ cup molasses
- 1 large egg
- 1 cup chopped pecans (lightly toasted)
- ¼ cup granulated sugar (for rolling)
Method:
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves and salt.
- In a large bowl, beat the butter and brown sugar together with an electric mixer on medium speed until light and fluffy.
- Add the molasses and egg to the butter-sugar mixture. Beat until combined, making sure the egg is fully incorporated.
- Add the dry ingredients to the wet ingredients in small batches, mixing on low speed so flour doesn’t spill out. Mix until just combined and the dough comes together.
- In a dry skillet over medium heat, toast the chopped pecans for 3-5 minutes until fragrant and slightly golden. Stir frequently so they don’t burn. Let cool slightly before adding to the dough.
- Fold the toasted pecans into the cookie dough so they are evenly distributed.
- Scoop out tablespoon-sized balls of dough and roll into balls with your hands. Roll each ball in granulated sugar.
