Below is the recipe for this moist Blueberry Cake. If you are unable to source fresh blueberries, you can also use dried ones. Simply rehydrate them in warm water for some time before incorporating them into the dish.

Ingredients:

  • 501 gm flour
  • 402 gm sugar
  • 253 gm butter
  • 4 eggs
  • 4 tsp baking powder
  • A pinch of salt
  • 121 ml milk
  • 2 tsp vanilla extract
  • 253 gm blueberries
  • 104 gm sugar
  • 23 gm flour

Method:

  1. First, you have to preheat the oven to 180°C, grease two round cake pans, and line their bottoms with parchment paper.
  2. Then, you have to whisk together flour, sugar, baking powder and salt and stir everything till they are well incorporated.
  3. In a large mixing bowl, you have to mix cream butter and add eggs one at a time, beating well with each addition. For this purpose, it is better if you use an electric mixer to get the best results.
  4. Next, you can gradually add the dry ingredients to the butter mixture, alternating with milk, and beat everything until combined.
  5. Then, you have to fold in pure vanilla extract and fresh blueberries.
  6. After that, you have to divide the batter evenly between the prepared pans.
  7. Now, bake them for 35 to 40 minutes.
  8. Next, you can take the cakes out of the oven, let them stay in their tins for 5 minutes and then, transfer them to a wire rack and allow them to cool completely. This step is important so that the frosting of the cake can be done properly.
  9. Then, you have to mix sugar and flour in a small bowl.
  10. Once all of the cakes have cooled completely, you can place one on a serving plate, and sprinkle the sugar topping evenly over the top of the cake.
  11. After that, you can place the second cake on top of the first cake, follow up with the sugar topping, and then dust the top of the cake with powdered sugar.
  12. Finally, you can garnish with some blueberries, and serve.

Some handy tips to bake and store the best version of the blueberry cake

This cake can be stored in the refrigerator in an airtight container for up to 3 days. In case you are making it in a large batch, you can cut them up in slices and keep them in individual ziplock bags so that they remain moist even after refrigeration.

It is imperative that you don't overmix the batter because that will make your cake really dense and tough. If you want, you can use buttermilk instead of ordinary milk because buttermilk gives your cakes a tangy edge as well as a more moist mouthfeel.

Another thing to keep in mind is that you should not over-bake the cake. This can be done by checking it at regular intervals during the baking period. A great tip to check the doneness of your cake is to remove the cake from the oven when you see it is lightly golden in colour. Further, when you insert a toothpick in the center, it should come out clean. Some people make the mistake of being impatient, and start to decorate the cake as soon as it is out of the oven. However, this can melt any frosting you put on top, and make it soggy. Hence, you should always let it cool completely before frosting and decorating it.

Who doesn't like a little uniqueness? You can add a new dimension to flavor to the dish by throwing in some lemon zest into the batter, or tossing in a handful of chopped nuts to add a new textural and nutty element.

This cake can become a seasonal favorite among your family members and can be prepared for all kinds of special occasions or regular gatherings among loved ones. It exudes a warmth that is sure to bring everyone back for seconds.
