Making Of A Crepe

Ingredients:

For the crepe:

  • 455 ml milk
  • 205 ml water
  • 3 eggs
  • 60 gm sugar
  • A pinch of salt
  • 105 gm flour
  • 15 gm butter
  • 2 tsp vanilla extract

For the filling:

  • 145 gm cream cheese
  • 5 gm sugar
  • 3 tsp vanilla extract
  • 14 gm lemon zest
  • 251 gm strawberries
  • 152 gm blueberries
  • 103 gm raspberries
  • 54 gm blackberries
  1. You have to lightly beat eggs in a mixing bowl, and whisk in the whites and yolks until they are well combined.
  2. Then, add milk and water, and keep whisking to avoid lumps.
  3. Next, you need to add granulated sugar and salt, and whisk the mixture to dissolve them.
  4. In another bowl, you will sift the plain flour. You may also use wheat flour for this recipe to make them slightly healthier.
  5. Then, add the dry ingredients to the wet ingredients bit by bit. You have to make sure to get rid of any lumps until the concoction is smooth.
  6. Now, add unsalted butter and vanilla extract, and stir everything well.
  7. You need to rest the batter for 45 minutes before you can start working with it. Your batter should be runny but still stick to the bottom of your ladle.
  8. In a non-stick pan, spoon a big spoonful of batter, and rock your pan up and down so that the batter distributes evenly along the diameter of the pan. This will ensure you get wafer-thin crepes. Flip it to the other side after a minute, and let both sides become slightly golden-yellow before popping them out of the pan. Repeat this step a few more times until you run out of batter. Now set your stack of crepes aside.
  9. For the cream cheese filling, you are going to combine cream cheese, granulated sugar, vanilla, and lemon zest in a blender and mix until smooth.
  10. You will then spread 1-2 tbsps of the cream cheese filling onto each crepe.
  11. You should not forget to top the cream cheese filling with sliced strawberries, blueberries, raspberries, and blackberries.
  12. Then, you will fold or roll the crepe to enclose the filling.
  13. While serving, you can sprinkle powdered sugar for the added sweetness.

When making the cream cheese filling, adding a bit of lemon zest helps balance out flavors. You can top with tasty sweeteners like honey, and maple syrup. For the cream cheese filling, use store-bought creme cheese like mascarpone or ricotta cream cheese. Else, you can make your own cream cheese at home by separating the milk solids with lemon juice and a cheesecloth.

To make your presentation a little more professional, once you finish assembling the crepe, slice them in half and serve them on a plate with a contrasting color. Top the crepes off with a dollop of whipped cream or caramel sauce.
