Love the smell of sweet almond oil? What if we tell you it can change your baking game make for some of the most delish dessert recipes ever. Two are cakes and one is banana bread and almonds bring out the best of the ingredients used in these – bananas, apples and yoghurt. Here’s a tip, replace the oil in your regular dessert cakes or bread, with one thing in mind – sweet almond oil is not shy, the taste of it will be more tham subtle, so keep that in mind and use complementary flavours whilst baking. Here are some recipes to get you started.

 1. Yogurt Cake with Sweet Almond Oil(Serves 6 people)

Ingredients

  • 250 gm plain yoghurt
  • 500 gm all-purpose fFlour
  • 400 gm granulated sugar
  • 3 Eggs
  • 1 tsp baking powder
  • 250 ml sweet almond oil

Instructions

  1. Preheat the oven to 180°C, then grease and line a round cake pan.
  2. Take a large bowl, and sift the flour and baking powder.
  3. Take another bowl and crack the 3 eggs into it and beat using an electric mixer or manual whip, vigorously, until light and fluffy.
  4. Gradually add the sugar to the eggs, beating as you add it, until the mixture is pale and creamy. Next, pour the almond oil into it, mixing as you pour. Then add the yoghurt and mix well until combined well.
  5. Fold the dry ingredients into the wet mixture, stirring as you combine. Add them in three batches, mixing each time being careful not to overmix.
  6. Pour the batter into the prepared cake pan and then bake for approximately 35-40 minutes. Test with a toothpick inserted into the center, its done if comes out crumb free.
  7. Let the yoghurt-almond oil cake to cool in the pan for 10 minutes before moving to a wire rack to cool completely.

2. Chocochip Sweet Almond Oil Banana Bread(Serves 12 people)

  • 125 gm all-purpose flour
  • 65 gm whole wheat flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 120 ml sweet almond oil
  • 150 gm granulated sugar
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 3 medium bananas, mashed
  • 40 gm mini dark chocolate chips
  • 35 gm thinly sliced almonds

Instructions

  1. Preheat the oven to 160°C and then work on the batter.
  2. Mash the three bananas in a bowl, keep aside.
  3. Take a big bowl, pour the almond oil and then the sugar and mix until completely smooth. Pour the vanilla then add the mashed banana and give it a mix.
  4. Take another bowl, add the flours, baking soda, salt and cinnamon. Give it a mix.
  5. In three parts, add the flour mixture to the banana bowl, muxing as you go.
  6. You'll have a thick batter once completely mixed.
  7. Next, add the sliced almonds and the chocolate chips too and mix.
  8. Bake for 45-60 minutes. Check with a toothpick inserted to check if done.

3. Apple cake with sweet almond oil

  • 300 gm all purpose flour
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 3/4 tsp cinnamon
  • 3/4 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 250 gm white sugar
  • 250 ml sweet almond oil
  • 2 eggs, room temperature
  • 1 1/2 tsp vanilla extract
  • 235 gm fresh apple, peeled, cored and cut into 8mm cubes
  • 55 gm almond flakes

Instructions

  1. Preheat the oven to 180°C, then grease and line a 9-inch springform cake pan.
  2. Take a big bowl, add the flour, baking soda, salt and spices in it and give it a mix to combine.
  3. Take another bowl, pour the oil and add the sugar, then crack in eggs and pour the vanilla.
  4. Divide the wet ingredients into three portions, and add to the dry ingredients, mixing as you go. Make sure you don't overmix.
  5. Add the apples and give it a light mix.
  6. Your batter is ready, add it to the cake pan. Sprinkle the almond flakes over the cake butterz after smoothening the surface.
  7. Bake for 45-50 minutes. Check with a toothpick inserted at the centre. If it comes out sticky, bake for another 10 minutes.
  8. Cool the cake for 15 minutes, then transfer to a wire rack before serving.

9. This is optional but for better taste and a pro feel, sprinkle powdered sugar over the cake.
