Take the flour, icing sugar, baking powder and cold butter in a bowl and rub the butter into the dry mix until you get a sandy consistency.
Add the vanilla essence and milk and bring it together to form a dough.
Place the dough in between 2 sheets of baking paper and roll it flat using a rolling pin and chill it for about 10-15 minutes.
Once chilled, take a cookie cutter, and cut out an even number of cookies. Cut out the center of half of these cookies in any desired shape to add the filling later and bake it in a pre-heated oven at 170˚ C for about 12-15 minutes till they are golden brown at the edges. Let it cool once baked.
To make the ganache, you need a ratio of 1:1 Cream to Chocolate.
Melt the chocolate using double boiler and add the cream into the melted chocolate and stir till the chocolate and the cream is mixed and the texture is smooth with no lumps.
Once it is cooled down, whip the ganache using a hand-held blender until smooth.
Pipe this chocolate filling on top of the cookie then put the cookie with the cut-out middle on top of this chocolate layered cookie.
