For the Recipe
- 2 ripe bananas
- ½ cup curd
- ½ cup vegetable oil
- ½ cup brown sugar
- ½ tbsp vanilla essence
- 2cups all-purpose flour
- ½ tbsp baking powder
- ½ tbsp baking soda
- 1 tbspCadbury cocoa powder
- 1 cup grated carrots
Directions
Peel ripe bananas and add it to a blending jar.
Add curd to the bananas.
Add some oil to make the mixture glossy and smooth.
Add brown sugar to sweeten the mixture.
Add vanilla essence for a floral flavor and blend everything together until smooth.
In a mixing bowl, take all-purpose flour. You can change it with almond flour or other gluten-free flour.
Add baking powder to the flour.
After that, add some baking soda. Both baking powder and baking soda will work as leavening agents.
Add cocoa powder to bring that chocolatey flavor.
Mix everything until well combined and homogenous.
Add grated carrots to the flour. Grated carrots will give the cake a delightful texture.
Mix in the carrots to combine it evenly all over.
Now combine both the wet banana mixture and dry flour mixture to make the batter.
Mix everything well to eliminate all the lumps.
Once the batter is well combined, pour it into greased cake tin.
Bake it for 30min at 180°c.
Remove the parchment paper and slice to serve.
