For the Recipe
- Sugar – 2 tablespoon
- Water – 1 tablespoon
- Pistachios – Half cup
- Cadbury Dairy Milk – 100 gms
Directions
Take a pan and put sugar and water in the pan before the pan heats up and dissolve the sugar on low flame.
Once sugar is dissolved, add the Pistachios into the sugar syrup and keep mixing till the sugar is crystallized.
Once it becomes crystalized and become powdery white, keep mixing till it gets caramelized and all sugar crystals are dissolved. It will start to become brown. When it becomes brown, stop the heat.
Add one spoon butter and mix it well.
Once butter has melted, remove from the pan, and take out the pistachios on baking paper and separate each pistachio to avoid it from sticking together and let it cool down completely.
In the meantime, melt 100 gms chocolate using double boiler method. Once chocolate has melted, remove from the boiler.
Now, take a small bowl and large mixing bowl and put few ice cubes and water into the small bowl and fix the large mixing bowl on top of the small bowl by slightly tilting it.
Put caramelized pistachios into the bowl and drizzle about 1 spoon of the melted chocolate over the pistachios and mix thoroughly.
Mix until the gloss disappears and each almond separates.
Once chocolate gloss disappears and becomes dry and each pistachio separates from each other, drizzle the melted chocolate again and mix thoroughly again till the chocolate dries out.
Repeat this process for about 15 times. This will ensure proper coating of the Pistachios. After the 15th layer, the pistachios will be coated nicely in the chocolate and your Pistachio bites is ready!!
The first layer of the chocolate coating may take a little time to dry up, but it takes a lesser amount of time with each added layer of melted chocolate. The pistachios should be separated every time they stick together to get a uniform coating.
It is better to make these bites in larger batches as they will consume the same amount of time even if you make a smaller quantity.
