Orange Angel Food Cake

Ingredients:

For the cake

  • 251 gm flour
  • 202 gm sugar
  • 103 gm egg whites
  • 4 tsp cream of tartar
  • A pinch of salt
  • 121 ml cold water
  • 2 tsp vanilla extract
  • 3 tsp orange zest
  • 64 ml orange juice

For the orange glaze

  • 201 gm sugar
  • 202 ml water
  • 3 tsp orange zest
  • 64 ml orange juice

Method:

  1. First, you have to preheat the oven to 180°C.
  2. In a medium bowl, you need to sift together flour and granulated sugar, and stir until very well combined.
  3. In a large mixing bowl, using an electric mixer, you have to beat egg whites and cream of tartar until stiff peaks form.
  4. Now, you can mix in granulated sugar gradually to the egg whites, beating them well and continuously until stiff peaks are formed.
  5. Then, you can sift the flour mixture into the egg whites, and toss lightly until the streaks of flour disappear.
  6. Next, you can add cold water, pure vanilla extract, grated orange zest, and freshly squeezed orange juice into the batter, and mix gently until all these are well combined.
  7. After that, you have to pour the batter into an ungreased angel food cake pan.
  8. Then, you can bake it for 40-45 minutes.
  9. Next, you can remove the cake from the oven, let it cool in the pan for 10 minutes, and place it on a wire rack to let the cake cool completely.
  10. Now, you can combine sugar, water, grated orange zest and fresh squeezed orange juice in a small saucepan, and cook over medium heat, stirring constantly until the sugar dissolves.
  11. Then, you have to bring it to a boil, and then reduce the heat to medium-low, letting it simmer for 5 to 7 minutes or until the syrup thickens slightly.
  12. After that, you need to remove the syrup out of the heat and cool it to room temperature.
  13. To assemble the cake, you can place the cooled cake on a plate, and brush the top of the cake with some of the orange syrup.
